1. Prepare the Milk
In a large pot, heat the milk over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.
2. Add Citric Acid
Once the milk has reached the desired temperature, remove it from the heat and stir in the citric acid until fully dissolved.
3. Add Rennet
Dissolve the rennet in a small amount of cool, non-chlorinated water, then stir it into the milk. Let it sit undisturbed for about 5-10 minutes until the curds form.
4. Cut the Curds
Once the curds have formed, use a knife to cut them into small cubes. Let the curds sit for another 5 minutes.
5. Cook the Curds
Gently heat the curds to 105°F (40°C) while stirring gently. Maintain this temperature for about 30 minutes, stirring occasionally.
6. Drain the Curds
Pour the curds into a colander lined with cheesecloth to drain the whey. Rinse under cool water and sprinkle with salt, mixing well.
7. Mold the Cheese
Transfer the curds into a mold or shape them by hand. Press down firmly to remove excess whey.
8. Age the Cheese (optional)
If you prefer aged cheese, wrap it in cheese paper and store it in a cool, humid environment for a few weeks.
