Make the Filling
Boil the potatoes until tender, then mash them. Heat oil in a pan, add cumin seeds and chopped onion, and sauté until golden. Add ginger, coriander powder, turmeric, garam masala, and salt. Stir in the peas and mashed potatoes. Cook for a few minutes until well combined.

Prepare the Dough
In a bowl, mix 2 cups of all-purpose flour with a pinch of salt. Gradually add water and knead until a smooth dough forms. Cover it and let it rest for 30 minutes.

Shape the Samosas
Divide the dough into small balls. Roll each ball into a thin circle, cut it in half, and form a cone shape. Fill with the potato and pea mixture, seal the edges with water, and pinch to secure.

Fry the Samosas
Heat oil in a deep frying pan. Fry the samosas in batches until golden brown and crispy. Remove and drain on paper towels.
