Prepare the Filling
In a pot, boil the diced potatoes until tender. Drain and mash them lightly. In a pan, heat a little oil and add cumin seeds. Once they splutter, add the chopped onion and ginger. Sauté until the onion turns golden. Add the boiled potatoes, green peas, coriander powder, garam masala, red chili powder, and salt. Mix well and cook for a few minutes. Finally, stir in the chopped cilantro and remove from heat.

Make the Pastry
In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 tsp of salt, and 3 tbsp of oil. Gradually add water and knead to form a smooth dough. Cover and let it rest for 30 minutes.

Assemble the Samosas
Divide the dough into equal balls. Roll each ball into a circle and cut it in half to create two semi-circles. Take one semi-circle, form a cone, and seal the edge. Fill the cone with the potato mixture and seal the open edge with water, pinching it to secure.

Fry the Samosas
Heat oil in a deep pan over medium heat. Fry the samosas in batches until they turn golden brown and crispy. Drain on paper towels.

Serve hot with mint chutney or tamarind sauce.
