1. Prepare the Filling
In a large mixing bowl, combine the shredded rotisserie chicken, chopped onion, minced garlic, mixed cheeses, cilantro, diced tomatoes, corn, and chipotle aioli. Mix well until all ingredients are evenly incorporated.
2. Assemble the Panini
Take one piece of panini bread or a ciabatta roll and spread a thin layer of olive oil on the outside. On the inside, place a generous amount of the chicken filling. Top with another slice of bread or the top half of the roll. Repeat for the remaining pieces.
3. Grill the Panini
Preheat a panini press or a grill pan over medium heat. Place the assembled paninis on the press or grill. Cook for about 4-5 minutes, or until the bread is golden brown and the cheese has melted. If using a grill pan, press down with a spatula.
4. Serve
Once cooked, remove the paninis from the heat. Cut each panini in half and serve warm with your choice of side.
