Cook the Sausage
Slice the smoked Andouille sausage into rounds and add to the pot. Cook for another 5 minutes, stirring occasionally.

Add the Beans
Add the red beans, chicken broth, bay leaves, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 30-35 minutes, or until beans are tender.

Cook the Rice
While the beans are simmering, rinse the rice under cold water. In a separate pot, bring 2 cups of water to a boil. Add the rice, cover, and reduce heat to low. Cook for about 18-20 minutes or until rice is tender and water is absorbed.

Prepare the Chicken
Fry the chicken breasts in a skillet until golden brown and cooked through, about 6-7 minutes per side. Remove from heat and let rest before slicing.

Serve
To serve, place a scoop of rice on a plate, spoon the red beans mixture over the rice, and top with sliced fried chicken. Garnish with chopped parsley.
