1. Prepare the Beans
Rinse the red beans under cold water and soak in water overnight. Drain before cooking.
2. Cook the Sausage
In a large pot, add the andouille sausage and cook over medium heat until browned. Remove and set aside.
3. Sauté the Vegetables
In the same pot, add chopped onion, green bell pepper, celery, and minced garlic. Sauté until softened.
4. Combine Ingredients
Add the soaked red beans, water, bay leaves, cayenne pepper, thyme, salt, and black pepper to the pot. Stir well.
5. Simmer
Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours or until beans are tender.
6. Add Sausage
After the beans are tender, add the browned sausage back into the pot. Stir and let simmer for an additional 15 minutes.
7. Serve
Serve the red beans over cooked rice, topped with sliced green onions and alongside fried chicken breast.
