Method

Prepare Mac and Cheese

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make Cheese Sauce

    In a saucepan over medium heat, melt butter. Stir in flour and cook for about 1 minute. Gradually whisk in milk, and cook until thickened. Stir in cheese, salt, pepper, and paprika until melted and smooth.

    Combine

    Add the cooked macaroni to the cheese sauce and stir until well coated. Transfer to a greased dish and let it cool completely in the refrigerator for at least 2 hours or until firm.

    Cut into Wedges

    Once set, cut the mac and cheese into wedges (about 8 pieces).

Prepare Batter and Fry

    Make the Batter

    In a bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add cold water until you reach a thick batter consistency.

    Heat Oil

    In a deep pan or fryer, heat oil to 350°F (175°C).

    Coat and Fry

    Dip each mac and cheese wedge into the batter, allowing excess to drip off. Carefully place in hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Prepare Salsa

    Combine Ingredients

    In a bowl, mix diced tomatoes, chopped onion, minced jalapeño, chopped cilantro, lime juice, and salt. Adjust seasoning to taste.
