    Mix Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

    Combine Wet Ingredients

    In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Cooking

    Preheat Griddle

    Preheat a non-stick griddle or skillet over medium heat and lightly grease with cooking spray or butter.

    Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes on the other side, until golden brown.
