Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.

In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, ensuring it is fully coated.

Fry the Onion Rings
Carefully place the battered onion rings into the hot oil, frying in batches until they are golden brown and crispy, about 2-3 minutes per side.

Drain and Serve
Using a slotted spoon, remove the onion rings from the oil and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
