    Prep the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips (about 1/4 inch wide) and soak them in cold water for at least 30 minutes to remove excess starch.

Cooking

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and pat them dry with a towel. Carefully add the potatoes in batches to the hot oil, frying them for about 5-7 minutes until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

    While the fries are still hot, sprinkle them with salt, paprika, garlic powder, and black pepper to taste.
