    Prepare the Potatoes

    Wash and peel the russet potatoes. Using a curly fry cutter, cut the potatoes into curly fries. If you don't have a curly fry cutter, you can use a spiralizer or a knife to create curly shapes.

    Soak the Fries

    Place the curly fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Cooking

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Coat and Fry

    Drain the soaked fries and pat them dry with a paper towel. In a bowl, mix the cornstarch, salt, paprika, garlic powder, and black pepper. Toss the fries in the seasoning mixture until evenly coated. Carefully add the fries to the hot oil in batches and fry for about 3-5 minutes, or until golden brown and crispy.

    Remove the fries from the oil and drain on paper towels. Serve hot with your favorite dipping sauces.
