Egg Scramble

Prepare the Ingredients
Gather all the ingredients for the egg scramble: eggs, diced tomatoes, artichoke hearts, fresh spinach, feta cheese, salt, black pepper, and olive oil.

Cook the Vegetables
In a non-stick skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced tomatoes, artichoke hearts, and chopped spinach. Sauté for 3-4 minutes until the spinach is wilted.

Add Feta Cheese
Remove the skillet from heat and sprinkle crumbled feta cheese on top of the scramble. Stir gently to combine.
Hash Brown Potatoes

Prepare Hash Browns
In another skillet, heat 2 tablespoons of vegetable oil over medium-high heat.

Flip and Finish Cooking
Flip the hash browns and cook for an additional 5-7 minutes until both sides are crispy and golden.
Toast

Toast the Bread
While the hash browns are cooking, toast 2 slices of bread to your liking.

Butter the Toast
Spread 1 tablespoon of butter on the hot toast.
