Corned Beef Hash Preparation

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.

    Add the hash brown potatoes and shredded cabbage to the skillet. Cook until the potatoes are golden brown and crispy, about 10-12 minutes, stirring occasionally.

    Add the house roasted corned beef to the skillet and mix well. Cook for an additional 5 minutes until everything is heated through and combined.

Jalapeno Cilantro Mayo Preparation

    In a food processor, combine 1 cup of mayonnaise, 1 medium jalapeno (seeded for less heat if desired), a bunch of fresh cilantro, and 2 tablespoons of lime juice. Blend until smooth and well combined.
