    Prepare Ingredients

    Chop the red onion and bell pepper into small pieces. Drain and chop the artichoke hearts if whole. Grate or slice the Swiss cheese.

    Beat the Eggs

    In a mixing bowl, crack the eggs and whisk them together. Add salt and black pepper to taste. Mix well.

    Cook the Vegetables

    In a non-stick skillet, add a bit of oil or butter over medium heat. Add the diced red onion and bell pepper, sauté for about 3-4 minutes until they become soft.

    Add Ham and Artichokes

    Stir in the diced ham and artichoke hearts, cooking for another 2-3 minutes until heated through.

    Pour in Eggs

    Slowly pour the beaten eggs over the sautéed mixture in the skillet. Let it cook for about 2 minutes until the edges start to set.

    Add Cheese

    Sprinkle the Swiss cheese evenly over the top of the omelette. Cover the skillet with a lid to help the cheese melt and allow the eggs to cook through, about 3-4 more minutes.

    Fold and Serve

    Once the omelette is fully cooked and the cheese has melted, gently fold it in half. Slide it onto a plate and serve immediately.
