Omelette Preparation

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo sausage until it is browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Mix the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Combine Ingredients

    Add the cooked chorizo and green chili to the egg mixture and stir to combine.

    Cook the Omelette

    In the same skillet, pour in the egg mixture and cook over medium-low heat. As the edges begin to set, gently lift them with a spatula to allow uncooked eggs to flow underneath. Cook until the top is nearly set.

    Sprinkle the cheddar jack cheese on one half of the omelette, then fold the other half over the cheese. Cook for another minute or until the cheese melts.
