Prepare Tortillas
In a skillet, heat vegetable oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until soft and pliable, then drain on paper towels.

Assemble Taquitos
Place a tablespoon of shredded pork in the center of each tortilla. Roll tightly and secure with a toothpick if necessary.

Fry the Taquitos
In the same skillet, add more vegetable oil if needed, and heat to medium-high. Fry the taquitos in batches until they are golden brown and crispy, about 2-3 minutes per side.

Serve
Remove the taquitos from the oil and place on paper towels to drain. Serve hot with pico de gallo, crema Mexicana, and drizzle with jalapeno honey.
