Prepare the Chicken
Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with ground cumin, paprika, salt, and black pepper. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.

Assemble the Quesadilla
In a large mixing bowl, combine the shredded chicken, cheddar jack cheese, and diced green chilis. Mix until evenly combined. Take one flour tortilla and place a generous amount of the mixture on one half of the tortilla. Fold the tortilla over to create a half-moon shape.

Cook the Quesadilla
In the same skillet, add another tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat with remaining tortillas and filling.

Serve
Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and serve with a side salad and your choice of dressing.
