Hand roll style sushi. Made by rolling rice and other ingredients with nori to form a cone shape that’s easy to pick up and eat with your hands.

Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, transfer to a bowl and let it cool slightly.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Microwave for 30 seconds or until sugar is dissolved. Pour this mixture over the cooked rice and gently fold it in. Allow rice to cool to room temperature.

Assemble the Te-maki
Cut each nori sheet in half. Place a small amount of sushi rice on the left side of the nori, and then layer in the cucumber, avocado, and shrimp. Sprinkle with sesame seeds.

Roll the Te-maki
Starting from the left side, roll the nori over the filling, forming a cone shape. Use your fingers to shape it while rolling. Serve immediately with soy sauce and wasabi.
