Preparation Steps
1. Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool for about 10 minutes.
2. Season the Rice
In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooled rice using a wooden spatula, being careful not to mash the grains. Allow the rice to cool to room temperature.
3. Prepare Fish
Slice the fresh fish into thin, bite-sized pieces. If using nori, cut it into strips or squares for garnishing.
4. Form Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1-2 tablespoons) and form it into a compact oval shape. Place a slice of fish on top of the rice.
5. Serve
Serve the nigiri with a small dab of wasabi on top and a side of soy sauce for dipping. Garnish with nori strips if desired.
