Prepare the Ingredients

Wash the bok choy thoroughly and chop it into bite-sized pieces. Clean the shiitake mushrooms and slice them thinly. Mince the garlic and grate the ginger.

Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Stir-Fry the Aromatics

Add the minced garlic and grated ginger to the skillet. Stir-fry for about 30 seconds or until fragrant.

Add the Mushrooms

Add the sliced shiitake mushrooms to the skillet. Stir-fry for about 3-4 minutes until they are soft.

Add the Bok Choy

Add the bok choy to the skillet and stir-fry for another 3-4 minutes until wilted.

Season the Dish

Pour in the soy sauce, sesame oil, salt, and black pepper. Toss everything together and cook for an additional 1-2 minutes.

Remove from heat and serve hot as a side dish or over steamed rice.
