Preparation and Cooking

Prepare the Venison Chops

Season the venison chops with salt and black pepper on both sides.

Sear the Chops

In a large skillet, heat the olive oil over medium-high heat. Add the venison chops and sear for about 3-4 minutes on each side, or until cooked to your desired doneness. Remove the chops from the skillet and let them rest.

Make the Sauce

In the same skillet, add the minced shallots and garlic. Sauté for 2-3 minutes until soft.

Add the Mushrooms

Add the wild mushrooms to the skillet and cook for another 5 minutes until they are tender.

Deglaze with Brandy

Carefully pour in the brandy and scrape up any browned bits from the bottom of the skillet. Allow it to simmer for about 2-3 minutes.

Finish the Sauce

Stir in the heavy cream and fresh thyme. Let the sauce simmer for an additional 5 minutes until thickened. Stir in butter until melted and combined.

Serve

Plate the venison chops and spoon the wild mushroom brandy cream sauce over the top. Enjoy!
