Preparation

    Prepare the Lobster

    Cook the lobster tails in boiling water for 5-7 minutes until just cooked. Remove and let cool. Once cool, cut lobster tails in half lengthwise and set aside.

    Fry the Lobster

    Heat oil in a frying pan. Dip lobster pieces in chicken batter mix and fry until golden brown, about 3-4 minutes. Drain on paper towels.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filets for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

    Prepare Champagne Butter Cream

    In a saucepan, combine Champagne and heavy cream. Bring to a simmer and reduce by half. Whisk in butter until melted and the sauce is smooth. Season with salt and pepper to taste.

    Cook the Green Beans

    Blanch green beans in boiling salted water for 3-4 minutes until crisp-tender. Drain and toss with a little olive oil, salt, and pepper.
