Prepare the Bone Marrow Butter

    Make the Bone Marrow Butter

    In a bowl, mix softened unsalted butter, roasted bone marrow, chopped fresh parsley, garlic powder, salt, and black pepper until well combined. Set aside.

Cook the Ribeye

    Season and Sear the Ribeye

    Take the ribeye steaks out of the fridge and let them come to room temperature (about 30 minutes). Season both sides generously with salt and black pepper. Heat olive oil in a large skillet over high heat. Add the ribeye steaks and sear for about 4-5 minutes on each side for medium-rare, adding garlic and rosemary to the pan for additional flavor.

Prepare the Sweet or Mashed Potatoes

    Cook the Sweet Potatoes

    Peel and chop the sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Serve

    Plate the Dish

    Serve the seared ribeye steaks topped with a dollop of bone marrow butter alongside a generous portion of sweet or mashed potatoes.
