    Prepare the Steaks

    Season the New York strip steaks generously with salt and coarsely crushed black pepper on both sides. Let them sit at room temperature for about 30 minutes.

    Cook the Steaks

    In a large skillet over medium-high heat, add olive oil. Once hot, add the steaks and sear for about 4-5 minutes on each side or until desired doneness is reached. Remove from the pan and let rest.

    Make the Sauce

    In the same skillet, add the butter and shallots. Sauté until shallots are soft, about 2 minutes. Carefully add cognac or brandy and ignite to flambé (optional). Cook until the alcohol is evaporated.

    Finish the Sauce

    Stir in the heavy cream and bring to a simmer. Cook for about 3-5 minutes until the sauce thickens slightly. Adjust seasoning with salt and additional pepper if needed.

    Serve

    Slice the steaks and serve with a generous drizzle of the sauce over the top. Pair with whipped potatoes on the side.
