Preparation
Prepare the Wild Rice
In a saucepan, combine wild rice and water. Bring to a boil, then reduce heat and simmer covered for about 45 minutes or until rice is tender.
Cook the Collard Greens
In a large pot, add collard greens with a little water, cover, and steam for about 10-15 minutes until tender. Season with salt and pepper to taste.
Cook the Trout
Heat a large skillet over medium heat, melt butter, and add the coated trout fillets. Cook for about 3-4 minutes on each side until golden brown. Transfer to a baking dish and bake in the preheated oven for about 10 minutes.
Prepare the Molasses Butter
In a small saucepan, melt remaining butter. Stir in molasses and cook for an additional 2 minutes. Drizzle over baked trout before serving.
Serve
Plate the pecan crusted trout alongside collard greens and wild rice. Drizzle with molasses butter and enjoy!
