    Prepare the Venison

    Slice the venison steaks into thin strips. Season with salt and black pepper.

    Prepare the Jalapenos

    Slice the jalapenos in half and remove the seeds. Cut the mozzarella into sticks that fit inside the jalapeno halves.

    Assemble the Roll Ups

    Take a strip of venison, place a jalapeno half with mozzarella on top, and roll it up. Wrap a bacon strip around the roll up and secure with a toothpick if necessary.

    Prepare the Glaze

    In a small bowl, mix the molasses and Dijon mustard until well combined.

    Heat olive oil in a skillet over medium heat. Place the bacon-wrapped roll ups in the skillet and cook for about 5-7 minutes on each side or until the bacon is crispy and the venison is cooked through.
