    Prepare the Bone Marrow Butter

    In a bowl, combine the roasted bone marrow, softened unsalted butter, minced garlic, fresh thyme, salt, and black pepper. Mix well and set aside.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper on both sides. Heat a skillet over medium-high heat and add a little oil. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Let it rest for 5 minutes before serving.

    Make the Mashed Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add milk and butter, then mash until smooth. Season with salt to taste.

    Prepare the Vegetables

    Steam or blanch the vegetables of your choice (such as asparagus or carrots) until tender but still crisp, about 3-5 minutes.

    Serve

    Plate the filet mignon alongside a generous serving of mashed potatoes and garnish with the prepared vegetables. Top the filet with the bone marrow butter before serving.
