Prepare the Bone Marrow
Preheat your oven to 350°F (175°C). Place the bone marrow in a roasting pan and roast for about 15-20 minutes, or until the marrow is soft and slightly bubbling. Allow to cool slightly, then liquify in a blender until smooth.

Prepare the Whipped Cream
In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip. Set aside.

Assemble the Sundae
In serving bowls, scoop the vanilla ice cream and drizzle the liquified bone marrow over the top. Add the soaked cherries and a generous dollop of whipped cream. Finish with a drizzle of chocolate and sprinkle chopped nuts on top.
