Prepare the Croutons
Preheat the oven to 375°F (190°C). Cut the focaccia bread into cubes and place them in a bowl. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat. Spread the bread cubes on a baking sheet and bake for 10-15 minutes until golden and crispy.

Make the Dressing
In a small bowl, combine minced garlic, anchovy paste, Dijon mustard, lemon juice, Worcestershire sauce, and the remaining 2 tablespoons of olive oil. Whisk until well blended. Season with salt and black pepper to taste.

Assemble the Salad
In a large bowl, chop the romaine lettuce into bite-sized pieces. Add the focaccia croutons and grated Parmesan cheese. Drizzle with the dressing and toss gently to combine.

Serve
Divide the salad into serving bowls and garnish with additional Parmesan cheese if desired. Serve immediately.
