In a bowl, combine the wild rice, all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well.

Preheat a waffle iron and spray with non-stick cooking spray. Pour the batter into the waffle iron and cook according to the manufacturer's instructions until golden brown.

Season the chicken breasts with smoked paprika, salt, and black pepper. Dredge them in flour, shaking off excess.
