Prepare the Cilantro Butter

In a bowl, mix softened butter, roasted garlic, chopped cilantro, and sundried tomatoes. Season with salt and pepper. Set aside.

Cook the Wild Rice

In a saucepan, bring 2 cups of water to a boil. Add wild rice, reduce heat, cover, and simmer for about 45 minutes or until tender. Drain any excess water.

Grill the Vegetables

Slice the zucchini and bell pepper. Toss with olive oil, salt, and pepper. Grill over medium heat until tender, about 5-7 minutes.

Charbroil the Salmon

Preheat the grill to medium-high heat. Season salmon fillets with olive oil, salt, and pepper. Place on the grill and cook for about 5-6 minutes on each side, or until cooked through.

Assemble the Dish

Place the cooked wild rice on plates, top with grilled salmon, and spoon the cilantro butter over the salmon. Serve with grilled veggies on the side.
