    In a small bowl, combine the soft unsalted butter, roasted bone marrow, finely chopped fresh herbs, and minced garlic. Mix until well combined and season with salt to taste. Set aside.

    Preheat your oven to 400°F (200°C). Pat the bone-in filet mignon dry with paper towels. Season generously with salt and black pepper on both sides.

    In a heavy skillet or cast-iron pan, heat olive oil over medium-high heat. Once hot, add the filet mignon and sear for about 3-4 minutes on each side until a golden-brown crust forms.
