Cooking Instructions

1. Prepare the Herb Butter

In a small bowl, combine the soft unsalted butter, roasted bone marrow, finely chopped fresh herbs, and minced garlic. Mix until well combined and season with salt to taste. Set aside.

2. Season the Filet Mignon

Preheat your oven to 400°F (200°C). Pat the bone-in filet mignon dry with paper towels. Season generously with salt and black pepper on both sides.

3. Sear the Steak

In a heavy skillet or cast-iron pan, heat olive oil over medium-high heat. Once hot, add the filet mignon and sear for about 3-4 minutes on each side until a golden-brown crust forms.

4. Roast in the Oven

Transfer the skillet to the preheated oven and roast for about 10-12 minutes for medium-rare, or until your desired doneness is reached.

5. Rest and Serve

Remove the filet mignon from the oven and let it rest for 5-10 minutes. Top with the prepared roasted bone marrow herb butter before serving.
