    Prepare the Asparagus

    Trim the asparagus and blanch in boiling salted water for 3-4 minutes until bright green and tender. Drain and set aside.

    Cook the Filet

    Season the buffalo filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filets for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

    Prepare the Hashbrowns

    In the same skillet, add hashbrowns and cook until golden brown and crispy, about 5-7 minutes. Flip halfway through. Season with salt to taste.

    Assemble the Dish

    On each plate, place a serving of hashbrowns. Top with the cooked buffalo filet, followed by the blanched asparagus and a generous scoop of jumbo lump crab meat. Drizzle hollandaise sauce over the top.
