Beef Tenderloin and Whipped Potatoes

    Prepare the Potatoes

    Peel the potatoes and cut them into even-sized chunks. Place them in a large pot, cover with cold water, and add 1 tsp of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Cook the Beef Tenderloin

    Season the beef tenderloin with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 10-15 minutes or until it reaches the desired doneness. Remove and let rest for 10 minutes before slicing.

    Make the Blackberry Port Reduction

    In the same skillet used for the beef, add blackberries and port wine. Cook over medium heat, stirring occasionally until the blackberries break down and the sauce thickens, about 10-12 minutes. Stir in 2 tbsp of butter and season with salt and pepper to taste.

    Finish the Potatoes

    Once the potatoes are tender, drain them and return to the pot. Add heavy cream, minced garlic, 2 tbsp of butter, and season with salt and pepper. Mash until smooth and creamy.

    Serve

    Slice the beef tenderloin and serve it on a plate with a generous spoonful of blackberry port reduction over the top. Serve the whipped potatoes on the side.
