Salmon and Rub

Method

Preparation and Cooking

  1. 1

    Prepare the Wild Rice

In a medium saucepan, combine wild rice, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes until rice is tender. Remove from heat and let sit covered for 10 minutes.

  2. 2

    Make the Butter

In a bowl, combine softened butter, sun-dried tomatoes, roasted garlic, cilantro, and lemon juice. Mix well and set aside.

  3. 3

    Prepare the Salmon

In a small bowl, mix together ancho chili powder, cumin, paprika, salt, and black pepper. Rub the mixture evenly over the salmon fillets.

  4. 4

    Cook the Salmon

Heat a grill or non-stick skillet over medium-high heat. Cook the salmon fillets for 4-5 minutes per side, or until cooked to your liking.

  5. 5

    Serve

Serve the grilled salmon topped with the sun-dried tomato, roasted garlic, and cilantro butter, alongside the wild rice.
