    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Wash the baking potatoes thoroughly, poke several holes in each potato with a fork, and rub them with olive oil, salt, and black pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

    Prepare the Filling

    In a large mixing bowl, combine the shredded chicken, corn kernels, diced jalapenos, BBQ sauce, and half of the shredded Monterey Jack cheese. Mix well to combine all the ingredients.

    Assemble the Loaded Potatoes

    Once the potatoes are baked and cool enough to handle, carefully slice each potato down the center and gently fluff the insides with a fork. Stuff each potato with the chicken mixture and sprinkle the remaining Monterey Jack cheese on top.

    Melt the Cheese

    Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Remove from the oven and let cool slightly. Top with sour cream and chopped chives if desired, and serve hot.
