Prepare the Chicken
Preheat your grill or oven to medium-high heat. Season the chicken breasts with salt and black pepper on both sides.

Grill the Chicken
Drizzle olive oil on the grill grates or in a baking dish. Place the seasoned chicken breasts on the grill or in the oven and cook for about 6-7 minutes per side, or until cooked through and juices run clear.

Prepare the Toppings
While the chicken is cooking, combine the diced jalapeño and corn in a small bowl.

Melt the Cheese
If grilling, close the lid for a minute or two to melt the cheese. If using an oven, place the chicken under the broiler for 1-2 minutes until the cheese is bubbly.
