Prepare the Milk Mixture
In a medium saucepan, combine the whole milk, heavy cream, and 3 tablespoons of granulated sugar. Split the vanilla bean lengthwise and scrape the seeds into the saucepan, adding both the seeds and the pod to the mixture.

Heat the Mixture
Place the saucepan over medium heat and warm the mixture until it is hot but not boiling, stirring occasionally. Remove from heat and let it steep for about 15 minutes.

Whisk the Eggs
In a large mixing bowl, whisk together the eggs and egg yolks until well combined.

Strain the Custard
Strain the custard mixture through a fine-mesh sieve into another bowl to ensure a smooth texture.

Prepare the Caramel
In a small saucepan, combine 1 cup of granulated sugar with 1 tablespoon of water. Stir gently to moisten the sugar.

Coat the Flan Molds
Quickly pour the caramel into the bottom of individual flan molds or a single large mold, tilting to coat the bottom evenly. Be careful, as the caramel will be very hot.

Pour the prepared custard mixture over the caramel in the molds.

Preheat your oven to 350°F (175°C). Place the filled molds in a large baking dish and add hot water to the baking dish until it reaches halfway up the sides of the flan molds, creating a water bath.
