    Rinse Quinoa

    Rinse 1 cup of quinoa under cold water to remove its natural coating, saponin, which can make it taste bitter.

    Chop Vegetables

    Chop the bell peppers, red onion, zucchini, and cherry tomatoes into bite-sized pieces.

Cooking

    Cook Quinoa

    In a medium pot, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing for about 2 minutes until fragrant.

    Add Remaining Vegetables

    Add the chopped bell peppers, zucchini, and cherry tomatoes to the skillet. Sprinkle with cumin, paprika, salt, and black pepper. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.

    Combine Quinoa and Vegetables

    Once the quinoa has rested, fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine all ingredients.
