Method
Dough Preparation
- 1
Mix Dry Ingredients
In a mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well to ensure the dry ingredients are evenly distributed.
- 2
Incorporate Butter
Add the butter to the flour mixture, using your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
- 3
Add Water
Gradually pour in the water, mixing with your hands until the dough comes together. Knead the dough for about 5 minutes until smooth.
- 4
Rest the Dough
Cover the dough with a damp cloth and let it rest at room temperature for 30 minutes.
Filling Preparation
- 5
Prepare Cheese
Cut the queso blanco (or mozzarella cheese) into sticks, about 1/2 inch thick and 2-3 inches long. Set aside.
Tequeño Assembly and Frying
- 6
Roll the Dough
After resting, take small pieces of the dough and roll them out into thin rectangles, approximately 4 inches by 2 inches.
- 7
Wrap the Cheese
Place a cheese stick at one end of the dough rectangle and roll it tightly, sealing the edges by pinching the dough together.
- 8
Heat the Oil
In a deep frying pan or pot, heat the oil over medium heat until it reaches 350°F (175°C).
- 9
Fry the Tequeños
Carefully place the wrapped tequeños in the hot oil, a few at a time, and fry until they are golden brown and crispy, about 3-4 minutes. Remove them with a slotted spoon and drain on paper towels.
