Prepare the Chicken Filling
- 1
Cook the Chicken
In a large pot, add the chicken thighs, cover with water, and simmer for about 30 minutes until cooked through. Remove the chicken, allow to cool, and shred into pieces.

- 3
Combine Filling Ingredients
Add the shredded chicken, diced tomato, cilantro, and season with salt and pepper to taste. Stir to combine and set aside.
Prepare the Tamal Dough
- 4
Mix the Dough
In a large bowl, combine corn masa, chicken broth, vegetable oil, baking powder, salt, ground cumin, and ground achiote. Mix until you achieve a smooth, pliable dough.
- 5
Rest the Dough
Cover the bowl with a damp cloth and let the dough rest for about 15 minutes.
Assemble the Tamales
- 6
Prepare the Banana Leaves
Soften the banana leaves by briefly passing them over a flame or dipping them in hot water. This will make them more pliable.
- 7
Fill the Tamales
On each banana leaf square, place a spoonful of tamal dough in the center, followed by a spoonful of the chicken filling. Fold the leaves over to wrap the tamale securely.
Cook the Tamales
- 8
Steam the Tamales
Place the wrapped tamales upright in a steamer basket over boiling water. Cover and steam for about 1 to 1.5 hours, or until the dough is firm and cooked through.
- 9
Serve
Once cooked, carefully unwrap the tamales and serve warm. Enjoy with a side of salsa or guacamole.
