Prepare the Chicken Filling

    In a large pot, add the chicken thighs, cover with water, and simmer for about 30 minutes until cooked through. Remove the chicken, allow to cool, and shred into pieces.

    In the same pot, using the leftover broth, add chopped onion, garlic, and bell pepper. Sauté for about 5-7 minutes until softened.

    Add the shredded chicken, diced tomato, cilantro, and season with salt and pepper to taste. Stir to combine and set aside.

Prepare the Tamal Dough

    In a large bowl, combine corn masa, chicken broth, vegetable oil, baking powder, salt, ground cumin, and ground achiote. Mix until you achieve a smooth, pliable dough.

    Cover the bowl with a damp cloth and let the dough rest for about 15 minutes.

Assemble the Tamales
