Cook the Eggs
In a non-stick skillet, melt the butter over medium heat. Once melted, pour in the egg mixture. Stir gently with a spatula, allowing the eggs to cook evenly. Continue stirring until the eggs are softly scrambled and slightly runny. Remove from heat.

Prepare the Arepa Dough
In a large bowl, combine the pre-cooked cornmeal, water, and salt. Mix with your hands until a soft dough forms. Allow it to rest for about 5 minutes.

Shape the Arepas
Divide the dough into 4 equal portions and shape each portion into a round disk, about 1/2 inch thick.

Prepare the Chorizo
While the arepas are cooking, slice the chorizo links and cook them in a separate skillet over medium heat, until they are browned and cooked through, about 5-7 minutes.

Assemble the Arepas
Once the arepas are cooked, cut a slit on one side to create a pocket. Stuff each arepa with cheese and cooked chorizo.
