    Prepare the hogao

    In a saucepan, heat the hogao over medium heat until it bubbles slightly. Stir occasionally and let it simmer for about 5 minutes to enhance the flavors.

    Scramble the eggs

    In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined. In a non-stick skillet, melt the butter over medium heat. Once melted, pour in the egg mixture and gently stir with a spatula. Cook until the eggs are softly scrambled, about 3-4 minutes. Remove from heat.

    Combine eggs and hogao

    Gently fold the prepared hogao into the scrambled eggs until evenly mixed. Keep warm while you prepare the arepas.

    Prepare the arepa dough

    In a mixing bowl, combine the arepa flour, water, and salt. Mix until a dough forms. If the dough is too dry, add a little more water; if too wet, add a bit more flour.

    Shape the arepas

    Divide the dough into 4 equal portions. Roll each portion into a ball and then flatten it to form a disc about ½ inch thick.

    Cook the arepas

    Heat a non-stick skillet or griddle over medium heat. Cook each arepa for about 4-5 minutes on each side, or until golden brown and cooked through. During the last minute of cooking, sprinkle cheese inside each arepa and allow it to melt.
