    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Add Egg and Water

    In a separate bowl, beat the egg and ice water together. Gradually add this to the flour mixture, stirring until the dough comes together.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.

Filling Preparation

    Cook the Beef Filling

    In a skillet over medium heat, cook the ground beef until browned. Add the diced onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened.

    Season the Filling

    Stir in the sliced olives, cumin, paprika, salt, and black pepper. Cook for another 5 minutes, then remove from heat.

    Prepare Spinach Feta Filling

    In a separate bowl, combine the chopped spinach, crumbled feta cheese, diced mushrooms, and beaten egg. Mix well and set aside.

Assembly and Baking

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into 6-inch circles.

    Fill the Empanadas

    Place a tablespoon of the beef filling or spinach feta filling in the center of each dough circle. Fold over and press the edges to seal.

    Preheat the oven to 400°F (200°C). Place the empanadas on a baking sheet lined with parchment paper. Beat the egg and brush it over the tops of the empanadas. Sprinkle with sesame seeds if desired.
