Method

Arepa Preparation

  1. 1

    Mix the Dough

In a large bowl, combine cornmeal and salt. Gradually add warm water, mixing until you achieve a soft dough that holds together.

  2. 2

    Form the Arepas

Divide the dough into 4 equal portions. Shape each portion into a patty about 1/2 inch thick.

  3. 3

    Cook the Arepas

Heat oil in a skillet over medium heat. Fry each arepa for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and set aside.

Chorizo Preparation

  1. 4

    Cook the Chorizo

In the same skillet used for the arepas (add a little more oil if necessary), cook the chorizo links over medium heat for about 8-10 minutes, turning occasionally, until they are browned and cooked through. Remove from skillet and slice.

Hogao Preparation

  1. 5

    Make the Hogao

In the skillet, add olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant. Then add the green onions and tomatoes, cooking for another 5-7 minutes until the tomatoes are soft. Season with salt and black pepper.

Assembly

  1. 6

    Combine the Ingredients

On each arepa, place some of the sliced chorizo and top with a generous spoonful of hogao. Serve immediately.
