Arepa Preparation

Mix the Dough
In a large bowl, combine cornmeal and salt. Gradually add warm water, mixing until you achieve a soft dough that holds together.

Form the Arepas
Divide the dough into 4 equal portions. Shape each portion into a patty about 1/2 inch thick.

Cook the Arepas
Heat oil in a skillet over medium heat. Fry each arepa for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and set aside.

Make the Hogao
In the skillet, add olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant. Then add the green onions and tomatoes, cooking for another 5-7 minutes until the tomatoes are soft. Season with salt and black pepper.
Assembly

Combine the Ingredients
On each arepa, place some of the sliced chorizo and top with a generous spoonful of hogao. Serve immediately.
