Rice and Beans Preparation

    Sauté Onion and Garlic

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

    Combine Rice and Beans

    Add the cooked rice and black beans to the skillet. Season with salt and black pepper. Stir well to combine and heat through, about 5 minutes. Set aside.

Chorizo and Eggs Preparation

    Cook Chorizo

    In a separate skillet, add the sliced chorizo over medium heat. Cook until the chorizo is browned and crispy, about 5-7 minutes.

    Fry Eggs

    In the same skillet, push the chorizo to the side and crack the eggs into the skillet. Cook to your desired doneness, seasoning with salt and pepper to taste.

Arepas Preparation

    Make Arepa Dough

    In a bowl, combine arepa flour, water, and salt. Mix until a smooth dough forms. Let it rest for 5 minutes.

    Shape and Cook Arepas

    Divide the dough into two equal balls and flatten into discs about 1/2 inch thick. Cook on a hot griddle or skillet for about 5 minutes on each side until golden brown. If using cheese, sprinkle it in the center before folding the arepa in half.

Assembly

    Serve the Dish

    On a plate, place a generous portion of the rice and beans mixture. Top with the cooked chorizo and fried eggs. Serve with the arepas on the side.
