Make the Arepa Dough

Combine Ingredients
In a large bowl, mix the pre-cooked cornmeal, warm water, and salt until a smooth dough forms.

Knead the Dough
Knead the dough for about 2-3 minutes until it is soft and pliable.

Form the Arepas
Divide the dough into 6 equal portions and shape them into balls. Flatten each ball into a disc about 1/2 inch thick.
Cook the Arepas

Heat Oil
In a skillet, heat the vegetable oil over medium heat.

Cook Arepas
Add the flattened dough discs to the skillet and cook for about 5-7 minutes on each side until they are golden brown and slightly crispy.

Prepare for Filling
Once cooked, remove the arepas from the skillet and let them cool slightly. Then, slice them open to create a pocket for the fillings.

Mix Filling Ingredients
In a mixing bowl, combine the shredded mozzarella cheese, cooked black beans, diced avocado, diced tomato, chopped cilantro, lime juice, salt, and pepper. Mix until well combined.
Assemble the Arepas

Stuff each cooked arepa with the filling mixture, making sure to pack it in well.

Serve the arepas warm, garnished with additional cilantro and lime wedges if desired.
