Method

Preparation

  1. 1

    Rinse the Rice

In a fine-mesh strainer, rinse the long-grain rice under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

  2. 2

    Cook the Rice

In a medium-sized pot, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the rice is tender.

  3. 3

    Add Milk and Sugar

Once the rice is cooked, add 4 cups of milk and 1 cup of sugar to the pot. Stir gently to combine.

  4. 4

    Add Flavorings

Add the cinnamon stick, vanilla extract, and a pinch of salt to the pot. Stir to incorporate all the ingredients.

  5. 5

    Cook the Mixture

Increase the heat to medium and bring the mixture to a gentle boil. Then, reduce the heat to low, and simmer uncovered for about 30-40 minutes, stirring frequently to prevent sticking. Cook until the pudding thickens to your desired consistency.

  6. 6

    Remove from Heat

Once the arroz con leche has thickened, remove it from the heat. Discard the cinnamon stick.

Serving

  1. 7

    Serve Warm or Chilled

You can serve arroz con leche warm, or let it cool to room temperature and refrigerate until chilled. Serve in bowls or cups.

  2. 8

    Add Toppings

Sprinkle ground cinnamon on top and add raisins and sweetened coconut flakes if desired, for added flavor and texture.
