Arepa Dough

Method

Prepare the Arepa Dough

  1. 1

    Mix the Dough

In a large bowl, combine the pre-cooked cornmeal, salt, and warm water. Stir with a spoon until the mixture comes together. Let it rest for about 5 minutes.

  2. 2

    Form Arepas

After resting, divide the dough into 4 equal portions. Shape each portion into a ball and then flatten it to form a disc about 1 inch thick.

Cook the Arepas

  1. 3

    Fry the Arepas

Heat 1 tablespoon of cooking oil in a non-stick skillet over medium heat. Add the arepas and cook for about 5-6 minutes on each side or until golden brown and crispy. Remove from the skillet and set aside.

Prepare the Filling

  1. 4

    Cook the Eggs

In a bowl, beat the eggs with a pinch of salt and pepper. In the same skillet used for the arepas, add a little more oil if necessary, and scramble the eggs over medium heat until fully cooked.

  2. 5

    Mash the Avocado

While the eggs are cooking, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.

Assemble the Arepas

  1. 6

    Fill the Arepas

Carefully slice each cooked arepa in half to create a pocket. Fill each pocket with a portion of scrambled eggs, shredded cheese, black beans, and mashed avocado.

  2. 7

    Serve

Serve the arepas warm, optionally with additional toppings such as salsa or hot sauce.
