Make the Dough

In a large bowl, dissolve yeast in warm water. Let it sit for about 5 minutes until it becomes frothy. Add olive oil, salt, and flour gradually, mixing until a dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Bread

Punch down the dough and shape it into a loaf or desired shape. Place it on a baking sheet lined with parchment paper.

Preheat the Oven

Preheat your oven to 375°F (190°C).

Prepare the Topping

In a small bowl, mix together the grated parmesan cheese and cracked black pepper.

Add Topping and Bake

Spread olive tapenade over the shaped dough and sprinkle with the parmesan cheese and pepper mixture. Bake in the preheated oven for 25-30 minutes until golden brown.

Cool and Serve

Remove the bread from the oven and let it cool on a wire rack for at least 10 minutes before slicing. Serve warm.
